Generally, the first thing that comes to mind when asking a Londoner about Caribbean food is jerk chicken. There is little or no scope for elevating Caribbean cuisine. We are changing that by introducing a dynamic, eclectic mix of Caribbean fare with foods that encompass the entire Caribbean region.
